Veganuary with Nikki

The New Year is all about changes! We are now more than half way through January and there are many people who have made the decision to adopt a plant-based diet. Although the idea of making a huge change during the New Year sounds appealing, sometimes it’s also very intimidating.

I recently made a new friend, Nikki. Nikki is an incredible gal who is promoting #Veganuary.

 

Veganuary is dedicated to changing public attitudes, while providing all of the information and practical support required to make the transition to veganism as easy and enjoyable as possible. Veganuary has ahas an incredible degree of success in a very short time and is changing lives all over the world. Veganuary’s founds, Jane and Matthew, knew that month long pledges were not unusual, but felt is could be done differently, and perhaps more successfully, by focusing on the month of January, a time for resolutions and new beginnings.”

“I’m Nikki, I’m a health coach (almost certified!) and foodie! I’ve always loved food and used to eat terribly. I had a bunch of health issues because of it and changing my diet literally changed all of that! I’m still a foodie though, and so now I combine my love for food with my love for health and make delicious, healthy food that doesn’t include the killing of animals. I’m participating in Veganuary and doing a Veganuary special on my blog where every week I post a new meal plan with 4 recipes. I’m doing this because I believe it’s a great opportunity for all of us to reset our health and because I think it’s a great opportunity for everyone out there to try something new without the scary long term commitment. Eating a plant based diet, whether you do it all the time or sometimes, can change your life in amazing ways and I just really, really, REALLY want more people to experience that!”

 

You read that right, people! Nikki has a Veganuary special up on her blog right now. You can check out Whole Foodie Health to get amazingly delicious and plant-based recipes right now. She is also on Instagram. And I have to say- Nikki has cooked for me and I was shooketh, she is not playing around in the kitchen. With that said, all of her recipes are simple and easy to make. You don’t need to be Rachel Ray to rock these recipes.
