We got about 5 inches of snow yesterday here on the East Coast. I had the candles going, Christmas Spirit diffusing, Elf on the TV. It was a Holiday Wonderland in here, ok. And it called for some serious cooking.
I put a poll out on Facebook earlier in the week. It was between Cauliflower Chowder and Wild Rice and Mushroom Soup. Cauliflower Chowder won. I love chowder so I was super excited to give this a go. As always, I put my own spin on it. You can find the recipe here.
I also made an incredibly tasty chili. Queen T’s Chili is worth the try, lemme tell ya. (And for my meat-eating friends- add any ground turkey, chicken or beef to make it your own!)
Both recipes were both great for the cold, snowy day I had. The chili would make a great meal-prep meal or hearty dinner for the family, while the Cauliflower Corn Chowder would be a great Sunday brunch addition.
